Mild soap and water handles daily wipe-downs between covers. For deeper end-of-shift or end-of-season cleaning, a soft brush with diluted teak cleaner restores the surface without drying out the wood. Most commercial food-service cleaners are fine. We recommend skipping bleach-based products, which can pull the oils out of the grain over time.
